Weekly baking - Rustic banana cake (gluten, dairy free version)

This week I had a few bananas left. They were going slowly brown so I have made a rustic banana cake to use them up.
Receipt is very easy and can be made into gluten and also dairy free version.



Ingredients:

1/2 cup of soft butter (sunflower oil for dairy free option)
1 cup of sugar
1 1/2 cup of flour self rising (or gluten free flour)
1/2 tea spoon of salt
3 bananas ( if you want to have bigger cake use bigger cup/ mug and use 4 bananas)
2 tea spoons of vanilla (1 table spoon of vanilla sugar)
little bit of cinnamon

You can add also some nuts.
A little bit of milk if you are using gluten free flour. ( When using gluten free flour all receipts needs more moisture)

Firstly bananas has to be made into mush. I use just a fork and mush them into a paste. Then just put all other ingredients in and mix so it looks like this.


Add some milk if it too dry. It should have this consistency.


Then pour it into a over proof dish. I always put some buttered baking parchment first. It is making easier to get it out after baking.


Then put into the oven for about 30 minutes. Oven on 180 C.


Of course I am always trying to use oven for something else too. I was making meat free diner, baked potatoes with vegetable and cheese. :-)
In the end cover the top so it will not burn.


And voila! Rustic banana cake.


Nice and moist. In our house it will not last long :-)
