Weekly baking - Eve's Pudding/ Upside down pudding

This week I did Upside down fruit pudding. It is simple to make but tricky to bake.



Ingredients:

450 g apples
175 g fruit (I used frozen)
75 g sugar (demerara add more flavour)
grated zest of 1 lemon/lime
125 g caster sugar
125 g butter
few drops of vanilla extract
2 eggs beaten
125 g self-raising flour
custard to serve with

I have here also some sultanas/ raisins. I did it once with them and it was quite nice.


First peal + slice the apples and layer them in the base of the oiled dish. Sprinkle over some of the fruit and a little of the demerara sugar. Add some lemon/ lime zest. Continue to layer the apples and fruit until all ingredients have been used.


Cream the sugar and butter together until light and fluffy. Beat in the vanilla extract and then the eggs. 


 Add slowly the flour and mix well.
 

Spread the sponge mixture over the top of the fruit and level it. I always put less of the mixture in the centre. The centre gets baked the least.




Cover it with kitchen foil and bake in preheated oven on 180C for about 40 minutes or until the sponge baked even in the middle.



 When done serve immediately with some custard. Enjoy! :-)
