Weekly baking - Birthday chocolate & strawberries Victoria sponge cake

My husband had a 30th birthday so I have made him a homemade cake. I have finally bought some matching cake forms so I could do Victoria sponge. I have added our home grown strawberries and voila Chocolate & strawberries Victoria sponge cake.
 



Ingredients:
175 g sugar
175 g self rising flour
175 g butter
3 eggs
1 table spoon of vanilla extract
1/2 of cooking chocolate
some strawberries
strawberry jam
a little bit of spiced rum (if you want to)

Cream:
50 g butter
50 g icing sugar
1 egg yolk


Firstly mix together sugar and butter.


Then in separate bowl whisk together eggs and vanilla extract.


Slowly pour the egg mixture into a butter + sugar bow and again mix properly.


 Add slowly flour.


Divide the mix in half and put into oiled and flour dusted forms. I have used about 22 cm diameter forms but you can use smaller. The cake will be just taller.


Distribute the mixture nicely and slightly dip it in the middle.


 Put into preheated owen on 200C for about 20 minutes or until golden. Take out of the form immediately and let cool dawn. If it will have some cracks don't worry it will be covered by chocolate.


Meanwhile prepare the cream. Just put the ingredients in the bowl and mix.


Then put it into this


Mix then some jam with spiced rum. It will make the cake smell very nice and also make it moist.


 and spread on top of the cake.

 
Put the other on top firmly.


Spread the thin coat on top of second cake.


Then melt the chocolate in water bath.


And carefully put on top of cake and jam.


 Put it also on sides and let it cool dawn until it is firm.


Then you can start decorating cake. I have also put some cream on the sides and then stuck to it some coconut shavings.


All done! Also good for teaching my husband some Czech. :-)
