This is a new receipt. I did it only once and it was delicious! Receipt is from my colleague from my work. I have used blackberry in the topping but you can really use any berries for it. Raspberry should be nice too.
Ingredients:
Brownie
200g dark chocolate, roughly chopped
200 g butter
250g icing sugar
3 eggs
110 plain flour
Cream topping
300ml whipping cream
100g icing sugar
150g blackberries
Put the chocolate in a heatproof bowl over a pan of simmering water and melt the chocolate.
Put the butter and sugar in another bowl and mix with mixer until smooth.
Add the eggs one at a time, mixing well.
Then gradually beat in the flour and in the end slowly pour in the melted chocolate.
Mix thoroughly. Pour into the prepared baking tray and smooth over. I used baking tray size approx 30 x 23 x 5 cm.
Put into preheated oven on 170C for about 30 minutes.
For the cream topping put the cream, sugar and blackberries into electric mixer. I have been lazy in mixed with hand held mixer. It was a little bit messy so if you have freestanding one please use it!
Whisk until firm but not stiff. Spread the topping on cooled dawn brownie.
