Czech dumplings

One receipt which nobody here in England knows is Czech dumpling receipt. It is staple food in Czech and easy to do. It is served traditionally with sauces.

 

Receipt:

150 ml milk (warm)
250 g plain flour
1/2 tea spoon of salt
2 pieces of white bread (or any roll)
1 tea spoon of sugar
dry yeast for 250g flour (25g?)

I usually do double of this receipt and make bigger pieces. If you have big pot you can also do it. Please mind the dough will rise and expand when cooking.

Just mix yeast with sugar and little bit of warm milk to start it. Then cut the bread into small pieces and then mix yeast into the flour + salt mix.




In the end mix in bread.
Make a ball from it and leave 1 hour to rise. Then divide into two (or 3 if double receipt) and make little oblong shapes with it.


 Leave another 15 minutes to rise. Meanwhile put big pot with water + little bit of salt to simmer.


Put 1 piece into the simmering water and cook for 8 minutes (it will float) after that turn it and leave for another 8 minutes.


Take out and cut it immediately into small slices. It is important to cut it when hot!


Repeat with second piece.
Done.
You can also make more and then freeze it. I always do double the receipt for more portions. It is so easy to just take it from the freezer and pop it into the microwave for 3 minutes.
Serve with sauces or the best is slow cooked duck + sweet cabbage. :-)
